The grapes are hand harvested before being gently pressed. Fermentation is slow and the temperature is controlled in stainless steel tanks while the juice sits on the fine lees which is moved regularly for the first 6 months. This wine goes through no oak treatment and so the fresh citrus and mineralogy isn’t hidden.
A fine and bright Chablis with aromas of green apple and citrus, perfect minerality and lingering but elegant flavours of pear and grapefruit.
